– Slice sweet potatoes into discs, drizzle some olive oil & season with mixed herbs and salt. Coat well and place them in a circle.
– Bake this @180*c for 15 mins.
– Now place onions & yellow bell peppers in the centre, drizzle some more oil & season with herbs & salt
– Bake for another 15 mins
– Top it up with some crumbled feta, chopped parsley & roasted almonds & Dig in!
